Pumpkin Bread

Ingredients:

  • 5 eggs

  • 1 ¼ cups vegetable oil

  • 1 can (15 ounces) solid-pack pumpkin

  • 2 cups all-purpose flour

  • 2 cups sugar

  • 2 packages (3 ounces each) cook-and-serve vanilla pudding mix

  • 1 teaspoon baking soda

  • 1 teaspoon ground cinnamon

Instructions:

  • Heat oven to 325 °F.

  • Beat eggs, oil, and pumpkin in a mixing bowl until smooth.

  • Gradually add remaining ingredients.

  • Pour batter into greased loaf pans.

  • Bake for 50-55 minutes or until a toothpick inserted near the center comes out clean.
