Chocolate Chip Cookie Bars


Ingredients:

  • 1 cup butter, softened

  • ½ cup white sugar

  • 1 ½ cup brown sugar

  • 3 eggs, separated

  • 1 tsp. vanilla extract

  • 1 Tbsp. water

  • 2 cups flour

  • 1 tsp. baking soda

  • Semi-sweet chocolate chips

Instructions for bar:

  • Heat oven to 325F.

  • Grease a 13x9 inch pan with butter and dust lightly with flour.

  • Mix butter, white sugar, and ½ cup brown sugar in a bowl.

  • Add egg yolks, vanilla extract, water, flour and baking soda.

  • Pour the mix into the pan and spread evenly.

  • Sprinkle chocolate chips over surface of mix.

Instructions for meringue:

  • Beat egg whites stiff, gradually adding the remaining 1 cup brown sugar in quick, small increments—careful not to over-whip the egg whites!

  • Place six dollops of meringue onto of the chocolate chip-covered mix and spread evenly—avoid lifting up the mix below.

  • Bake for 35 minutes!
