Stuffed Red Bell Pepper

Ingredients:

• Red bell peppers

• Organic brown basmati rice

• Green peas

• Olive oil

Instructions:

• Heat oven to 375F

• Wash several red bell peppers

• Cut off the tops of the red bell peppers. Carve and throw out the insides.

• Place the hollowed red bell peppers and their tops in a cupcake or popover pan and brush their outsides with olive oil.

• Cook the red bell peppers in the oven for about 15-20 minutes.

• Stuff them with the basmati rice and green peas, then cook for an additional 10 minutes until slightly charred.
